Fresh, local produce is the heart of everything dish I create. Everything begins by sourcing the best ingredients.

Sustainability is key to our mission and our belief that local is king. The road less travelled, in rather literal terms, is something that I consider to be central to my ethos. With the vast array of ingredients that Wales produces, why would we need to go any further?

Whether it’s our local butchers or fishmongers, their hard work has been the cornerstone of the region’s ever-growing culinary scene since its beginnings. It is cardinal that we recognise them and honour them with the dishes that we produce.

Wales is a treasure trove, bursting with local produce. Our green pastures produce some of the best vegetables, Welsh lamb and Welsh black beef. Foraged ingredients such as wild garlic, seaweed, mushrooms and berries are abundant.
